From one famous loaf

Five generations of Buffalo baking.

It started with the first loaf of Al Cohen's famous rye. More than a century later, the same family standard runs a modern frozen dough plant on Broadway Street, supplying operators across much of the United States.

  1. 1888 · The first loaf

Al Cohen's bakes the rye bread Buffalo still knows by name, and a family business is born.

  2. 1970s · Frozen pioneers

Among the first to flash freeze scratch-made dough, perfecting the process most of the industry later adopted.

  3. Today · Covelli Premium Dough

A leading wholesale supplier of premium dough products, still family owned and operated, still backed by a 100% satisfaction guarantee.

Frozen vs Scratch

Frozen by us.
Fresh from your oven.

Scratch flavor is not negotiable. Scratch labor is. Our dough is mixed by the same bakers on the same equipment every day, then flash frozen at peak, so your kitchen skips the 4 AM shift without giving up the result.

  • Time savings

Thaw, proof, bake. No mixing shift, no bench time, no cleanup between batches.

  • Consistent quality

The same mixers make our dough day in and day out. Batch 1 and batch 400 bake the same.

  • Cost savings

Less spoilage, fewer failed batches, and no skilled scratch labor on the payroll.

  • Convenience

Thaw and bake frees up bench space, mixer space, and a whole prep station.

  • Versatility and variety

Run recipes you could never staff for: wood-fire dough, old world rye, specialty rolls, all from one freezer.
